This study is looking at new ways to help adults recently diagnosed with celiac disease manage their condition. It will test if using portable technology to detect gluten after eating, combined with regular online meetings with a dietitian (telemedicine monitoring), can help your small intestine heal better. The main goal is to see how well your small intestine heals after 12 months. You might be able to join if you are between 18 and 75 years old, have a confirmed celiac disease diagnosis within the last four months, and are willing to use the gluten-detection technology.
