GF-NOURISH: Improving Gluten-Free Diets for Children with Celiac Disease

The GF-NOURISH study is looking at new ways to teach children with celiac disease (an autoimmune condition where eating gluten damages the small intestine) and their families about eating gluten-free. This study wants to see if a special education program, focused on natural gluten-free foods and reducing highly processed gluten-free options, can lead to better health. Currently, children with celiac disease often eat a lot of rice-based gluten-free foods, which can increase arsenic levels in their bodies. This study will compare two different gluten-free diet education programs. Researchers will measure changes in body composition, specifically fat-free mass, over six months to see which education method is more effective. Children aged 2 to 18 years old who have been recently diagnosed with celiac disease can join this study. About 120 children are expected to participate.

Inclusion

Age 2-18 years of age with recent celiac disease diagnosis

Exclusion

Allergic to \<3 of the top 8 food allergens
Co-morbid conditions treated with dietary modifications or that influence nail arsenic values

Therefore, the investigators will use bio-impedance spectroscopy analysis (BSA), which is a simple, noninvasive, reproducible, portable and convenient method to measure body composition.26 BSA utilizes body resistance and reactance to derive phase angle (PhA) and estimate the fat (FM) and non-fat (FFM) components of the body
