EoE Food Test Pilot Study for Eosinophilic Esophagitis

This study is testing a new way to find out which foods cause Eosinophilic Esophagitis (EoE), a condition where certain white blood cells (eosinophils) build up in your esophagus (the tube that connects your mouth to your stomach). Researchers will take blood samples and test how your immune cells react to common trigger foods like milk, soy, egg, and wheat. This information will help your doctor decide if you should avoid these foods. The main goal is to see if these blood tests can accurately predict which foods are causing your EoE, by comparing the results to standard endoscopy (a procedure where a doctor looks inside your esophagus) after you've changed your diet. You can join if you are between 0 and 90 years old, have an EoE diagnosis confirmed by a recent biopsy, and plan to change your diet to treat your EoE.
